INGREDIENTS:
2 Boneless Chicken Breasts 2 Cloves garlic crushed/finely chopped 1 tsp finely chopped chillies 1 tsp minced/grated ginger 1 tsp oregano/italian seasoning salt to taste (unless you are worried about your arteris, add plenty) 1 tble sp Olive oil METHOD 1. Mix all the ingredients in the olive oil 2. Deeply score the chicken breasts and coat in the oil, herb and spice mixture 3. Leave to marinade over night, if possible, but at least 2 hours 4. Grill chicken under a medium heat for about 15 - 20 mins Serve with tomato, feta & olives, and tossed green salads ALternative: instead of Olive Oil, use 1 dessrt sp of Seseme oil and 1 dessrt sp of Lemon(or Orange) juice |
